These awesome flourless chocolate peanut butter brownies are vegan, gluten-free, dairy-free, low-sugar, low-carb, low-fat, high protein, and nutritiously made with a secret ingredient – white beans! A PERFECT dessert to start off the new year!
I’ve loved experimenting with desserts made with beans for a few years now, ever since trying ChocolateCoverKatie’s Sugar-Free Cookie Dough Dip & her Healthy Chickpea Blondies. Since that time I’ve branched out to other recipes an flavors, and every time I’ve been amazed at just how good a dessert can be with .well an ingredient like beans!
What really impresses me is how using beans and other *secret* ingredients can make a normally unhealthy dessert into a nutritiously amazing recipe! Which is what I shoot for every time I healthify a recipe in my kitchen.
I think my favorite thing about using beans in desserts is how fudgy they turn out. My preference for all things fudge is probably due to the slightly under-cooked brownies and cookies I grew up on – and still, eat
I adapted this recipe from Ambitious Kitchen’s Flourless Chocolate Chip Chickpea Blondies and ChocolateCoveredKatie’s Healthy Chickpea Blondies. I loved both of those recipes, but I wanted something a bit different, so I experimented and everything turned out great! My intent was to create chocolate peanut butter bars with a “healthy Reese’s” type flavor, and I think these came pretty close.
When I plugged in the ingredients into a nutrition calculator, I was pretty amazed. Under 150 calories? Score! Only 3 grams of fat and 23 grams of carbs? Double Score! Less than 6 grams of sugar per square? Triple Score! Needless to say, I am very happy with these bars. Especially since these were the first bean desserts that my cautious siblings actually said tasted good.

Recipe type: Vegan Brownies
Serves: 16 brownies

The best ever flourless chocolate peanut butter brownies that boast low sugar, carbs, and fat, and high in protein and fiber. They are also naturally gluten-free, dairy-free, and vegan. Too many good health points in this recipe to pass it up
15 oz can white beans
⅓ cup maple syrup
2 tsp vanilla
¼ tsp baking powder
¼ tsp baking soda
⅛ tsp salt
5 Tbl peanut butter
2 Tbl regular or milk cocoa powder
1 Tbl maple syrup OR 1-2 tsp stevia powder
Preheat oven to 350 and line an 8×8 pan with parchment paper.
Put the first 6 ingredients (from beans to the salt) into a food processor and blend until smooth, making sure to scrape down the sides.
Take out half the batter and put it into a small bowl. Add to that bowl the 2 Tbl of cocoa and the 1 Tbl maple syrup or the 1 tsp stevia, and mix until incorporated. Set the bowl aside.
Put the 5 Tbl peanut butter into the food processor with the other half of the batter and blend until fully mixed.
Scoop spoonfuls of each of the batter at different places in the pan so that the batter looks like it has patches of each batter touching each other.
Take a small knife or dowel rod and run it through the batter to swirl the two batters together – but just a bit – you don’t want to fully combine them together. You just want a pretty pattern =)
Bake for 27-33 minutes. Mine baked for a little over 30 minutes.
It is done when only a few fudgy crumbs hold onto an inserted toothpick.
Cool for 30 minutes before cutting into squares.
To store, keep them in a plastic bag of wrapped in plastic wrap for 3 days.
